Fix it
Baking Sheet Troubleshooting (2026)
Fixes for common baking sheet problems: warping, burnt bottoms, sticking, staining, and rust spots.
Most baking sheet problems come from heat, size, or care rather than from a faulty pan. Work through the fixes below before replacing a sheet.
Pan warps and pops in the oven
Warping usually means thin metal or a weak rim. Let the pan cool fully before washing, since cold water on a hot pan worsens twisting, and consider a heavier-gauge pan with a reinforced rim, like Nordic Ware or Vollrath, if warping repeats.
Cookie bottoms burn while tops stay pale
Dark pans and a low rack both brown bottoms faster. Move the rack to the middle, check a few minutes early, and try a light-coloured aluminum pan with parchment, which browns more gently than a dark coated pan.
Food sticks even on a nonstick pan
Sticking on a coated pan usually means the coating is worn or the pan was overheated empty. Lightly grease or line the pan for sticky bakes, avoid metal utensils, and replace the pan if food sticks across the whole surface despite lining.
Aluminum pan is stained or discoloured
Heat, oils, and dishwasher detergent mark natural aluminum, and the marks are cosmetic. Hand wash going forward, and clean with a baking soda paste for the worst marks, but accept that a working aluminum pan will not stay bright.
Roast juices run to one corner
Juices pool where a pan is warped or where an oven rack is unlevel. Check the pan on a flat surface: if it rocks, it is warped and should be replaced for roasting. If it sits flat, level the rack and spread food evenly rather than crowding one side.
Pan does not fit the oven
Measure the oven interior, including the door frame, before ordering, since nominal sizes differ from exterior sizes. A big sheet needs a large oven; if it does not fit, a half sheet pair or a quarter sheet is the practical replacement, not forcing the door shut.
Questions, answered
Can a warped pan be fixed?
Usually not reliably. A pan that rocks on a flat surface will keep warping in the oven, since the metal has already yielded. It can still serve for cold prep, but for baking and roasting, replacement is the honest fix.
Why does my pan have rust spots?
Steel rims and aluminized steel can spot if left wet or washed harshly. Dry pans fully before storing, hand wash coated pans, and treat a spot early with gentle cleaning before it spreads.
Should I preheat a baking sheet?
Only for specific jobs, like roasting vegetables that benefit from a hot surface. Preheating an empty coated pan can damage the coating, and preheating is unnecessary for cookies, which should start on a cool or room-temperature pan.
