Bread Machine Problems? Fixes for Dense Loaves, Collapsed Tops & More (2026)

Diagnose common bread machine failures: dense crumb, collapsed tops, paddle holes, and machines that will not start.

Most bread machine failures trace to ingredients or measurements, not the machine. Work through these fixes in order before assuming the appliance is broken.

Dense, heavy loaf

The most common cause is too much flour or dead yeast. Measure flour by weight; a cup can vary by 30 percent depending on scooping. Check the yeast date and proof it in warm water with a pinch of sugar; if it does not foam in 10 minutes, replace it. Also confirm you used bread flour, which has the higher protein content the machine's knead cycle expects.

Loaf rose then collapsed

Over-proofing: too much yeast, too much sugar, or too warm an environment. Reduce yeast by 1/4 teaspoon and make sure liquids are room temperature, not warm. On machines with adjustable rise times, shorten the final rise. Do not open the lid during rising; the temperature drop followed by recovery can destabilize the structure.

Paddle stuck inside the loaf

Coat the paddle shaft lightly with oil before adding ingredients, which prevents dough from baking onto it. If it still sticks, let the loaf cool 10 minutes in the pan, then twist the paddle gently with tongs rather than digging it out. The Breville Custom Loaf avoids this entirely with its collapsible paddle.

Machine will not start

Check that the pan is seated and locked; most machines have a safety interlock that prevents starting with a loose pan. Confirm the outlet works with another appliance. If the display is dead after a power flicker, unplug for 5 minutes to reset the control board. Persistent failure to heat usually means a failed element, which is a service-center repair.

Questions, answered

Why is the top of my loaf always pale?

Single-heater machines brown the bottom far more than the top; it is a design limitation, not user error. The convection fan on the Cuisinart CBK-200 narrows the gap, and the Zojirushi's dual heaters eliminate it. On other machines, brushing the top with milk before baking deepens color slightly.

Can I open the lid during baking?

Avoid it. Opening the lid drops the chamber temperature by tens of degrees and can collapse the loaf, especially during the rise. Use the viewing window instead. The only exception is removing the paddle after the final knead on machines that signal for it.
