Deep Fryer Not Working? Fixes for the Common Problems (2026)

Oil will not heat, food comes out greasy, the fryer smells: the common deep fryer problems and how to fix each.

Most deep fryer problems are temperature problems in disguise. Work through these before assuming the machine is broken.

The oil will not reach temperature

Check that the thermostat probe or control assembly is fully seated; many fryers will not heat if the magnetic or plug-in control is loose. If it is seated and the oil still will not heat, the heating element or thermostat has likely failed, which usually means replacement on a sealed budget unit.

Food comes out greasy and soggy

The oil was not hot enough. Verify with a thermometer: you want 350 to 375 degrees Fahrenheit when the food goes in. Fry smaller batches, let the oil fully recover between loads, and pat food dry before frying, since surface moisture crashes the temperature fastest.

The oil smokes heavily

The oil is degraded or the temperature is too high. Old oil smokes at lower temperatures; if the oil is dark, foamy, or smells off, discard it. If the oil is fresh, the thermostat may be overshooting: lower the setting and verify with a thermometer.

The fryer trips the circuit breaker

Deep fryers draw 1500 to 1800 watts, near the limit of a standard kitchen circuit. Run the fryer on a dedicated outlet with nothing else on that circuit, especially not a microwave or toaster oven. If it trips alone on a clear circuit, the element may be shorting and the fryer should be retired.

Questions, answered

Why does my fried food taste like the last thing I fried?

Flavor transfer happens when oil is reused across strongly flavored foods. Fry in order from mild to strong, strain the oil after each session, and keep a separate batch of oil for fish. Filtration helps but does not fully reset flavored oil.

How do I know when the oil is done?

Discard it when it is dark, smells rancid or fishy, foams on the surface, or smokes well below frying temperature. No amount of filtering restores chemically degraded oil.
