Pizza Oven Problems? Fixes (2026)

Common pizza oven problems: sticking launches, burnt tops, soggy centres, stones that will not heat, and smoky fires.

Most pizza oven failures are dough, stone temperature, or launching problems, not oven defects. Work through these fixes before blaming the hardware.

Pizza sticks to the peel and folds on launch

Use a cool, dry peel dusted with semolina or flour, build the pizza fast, and shake the peel to confirm the base is free before launching. If it sticks mid-build, lift an edge and blow a little flour underneath rather than forcing it. Wet toppings and slow assembly are the usual causes.

Top burns while the base stays pale

The stone is under-heated or the flame is too high after launch. Preheat until an infrared thermometer reads 750 to 850 degrees on the stone, then reduce the flame slightly once the pizza is in. Turn the pizza earlier and more often so no single edge faces the flame too long.

Centre is soggy despite a crisp crust

Too much sauce, wet mozzarella, or toppings that release water are the likely culprits. Use less sauce, drain fresh mozzarella, and pre-cook watery vegetables. A slightly longer bake at a slightly lower temperature also helps the centre catch up.

Stone will not reach temperature

Check fuel first: a low gas bottle, damp pellets, or wet wood all cap temperature. Shield the oven from wind, which strips heat fast, and give the stone a full preheat rather than judging by air temperature. A stone that stays cool after a full preheat with good fuel needs a burner or airflow check.

Wood or pellet fire smokes heavily

Damp fuel is the usual cause: store wood and pellets dry and never burn painted or treated timber. Clear ash from the firebox before lighting, since blocked airflow smoulders instead of burning cleanly. A short, hot fire beats a long, smoky one for pizza.

Questions, answered

Can I wash my pizza stone?

No soap and no soaking: stones are porous and absorb both. Scrape off residue with a brush or scraper once cool, and flip the stone so the next hot bake burns the underside clean.

Why does my oven soot up the crust?

Soot comes from incomplete combustion, usually damp fuel or restricted airflow. Dry fuel, a clean firebox, and a fully established flame before launching keep soot off the pizza.
